What's Unique

New York City's first whiskey distillery since Prohibition, founded in 2010 by Colin Spoelman (from Kentucky) and David Haskell. Started in a 324 square foot space in East Williamsburg; moved to the historic 1901 Paymaster Building in the Brooklyn Navy Yard in 2012. Uses 80% New York State certified organic corn and 20% Golden Promise malted barley from Thomas Fawcett Maltsters in the UK — a mashbill that borrows more from Scotch single malt tradition than Kentucky bourbon. Double pot distilled. The absence of rye or wheat as a flavoring grain is a deliberate departure from the American bourbon template.
