What Makes This Different

A landmark in American single malt — made from 100% two-row Pacific Northwest malted barley, fermented using American ale yeast (not standard distiller's yeast) in a process adapted from craft beer brewing. The ale yeast produces a complex ester profile that differs fundamentally from both Scotch single malts and American bourbon. Matured in new, heavily toasted and lightly charred American oak barrels rather than used ex-bourbon or ex-sherry casks, giving it a uniquely American wood character. A pioneer expression that helped define the American Single Malt category before it had formal legal recognition.
