Founded in 2011 by former New York City fashion photographer Michael Myers, Distillery 291 is nestled in the shadow of Pikes Peak and produces award-winning Colorado whiskeys entirely from grain to barrel to bottle. The distillery uses aspen stave finishing — a uniquely Colorado technique — and earned 2022 American Craft Producer of the Year.
