Balcones Baby Blue Corn Whisky

The first Texas whisky legally sold in the state and the product that put Balcones — and Texas whisky — on the national map. Made from 100% roasted heirloom blue corn masa (atole), not standard yellow dent corn. The blue corn imparts a distinct earthiness and sweetness quite different from traditional bourbon corn. Aged in small used oak barrels (not new charred, which is why it's classified as 'whisky' rather than bourbon). Double pot distilled. Extended low-temperature fermentation for 7+ days. A foundational craft whisky that established an entirely new Texas style.
